Why you’ll love it.

Paradise was lost over an apple. Having tasted them, we understand. Here’s the temptation without the punishment.

  1. Sweet meets tangApple brings the sweetness and sumac a bright, lemony tang, so it lifts food instead of smothering it.
  2. Complements great foodGarlic, onion and warm spices give it a rich, savoury depth that rounds out every bite.
  3. A heat that lingers kindlyFruity red habanero warmth that stays a while but never takes over.

What you’ll taste.

Red habaneroFermented in salt brine with red pepper,
onion and garlic before blending.
AppleFresh apple, blended in after the
ferment for natural sweetness.
SumacBloomed in warm vinegar for a
bright, lemony tang.

The ritual.

Close to home.We use as many local ingredients as we can, including peppers, apples, and honey from Ontario, and whiskey from an Ottawa distillery.
Every layer on purpose. To build deep, complex flavours, the peppers and most of the other ingredients are fermented together for weeks.
Every detail, by hand.Every batch is fermented, blended and bottled by hand, and we make our own components, like Incorruptible’s pickles, to keep the ingredient list clean.
