Why you’ll love it.

The old trials believed fire revealed what something was really made of. We spared the witches and turned it on our peppers instead.

  1. Gives anything a grilled edgeCharred peppers bring a deep, caramelised flavour with a faint, pleasant bitterness.
  2. Peppery and warmCracked black pepper and a hint of warm spice round out every bite.
  3. A heat with a whisky finishFruity habanero warmth, finished with a measure of Canadian whisky.

What you’ll taste.

Charred peppersOrange peppers charred hard, then
fermented with carrot, onion and garlic.
Canadian whiskyStirred in near the end of the process,
for warmth and depth.
Pepper, spice and orangeBlack pepper bloomed in warm vinegar,
with fresh orange zest at the finish.

The ritual.

Close to home.We use as many local ingredients as we can, including peppers, apples, and honey from Ontario, and whiskey from an Ottawa distillery.
Every layer on purpose. To build deep, complex flavours, the peppers and most of the other ingredients are fermented together for weeks.
Every detail, by hand.Every batch is fermented, blended and bottled by hand, and we make our own components, like Incorruptible’s pickles, to keep the ingredient list clean.
